At Colleyville Farmers Market, we are proud to offer low-temperature pasteurized, non-homogenized milk from Texas Daily Harvest along with free range eggs and artisan cheeses. So what’s the difference between non-homogenized milk and the store bought milk? Low Temperature Pasteurization is the gentlest form of pasteurization. Texas Daily Harvest brings its milk to only 145 degrees for 30 minutes. This kills any fast-growing (pathogenic) bacteria with minimal effects on the nutritional quality of the milk. It also leaves some of the slow-growing (lactic acid producing) bacteria. These are the good bacteria. They cause milk to "sour" rather than rot like typical store-bought milk does. When this milk turns sour, it can still be used in cooking as you would buttermilk.
In a recent Dallas News blog by reporter Kim Pierce, she wrote about sampling this milk:
“If I were making ice cream on this Memorial Day, I would do my darndest to use some milk from Texas Daily Harvest. It's pasteurized (by law), but it's not homogenized, so the cream floats to the top and you have to shake the container each time before you pour it. The dairy in Yantis is also certified organic.
"The milk has such a rich, vivid, nutty taste - and a finish! A surprisingly long finish. I mean, we're talking milk, here. It's not quite like raw, but it is like Technicolor next to black-and-white compared to what you buy at the store.”
